Green Enchilada Chicken Casserole

1 bag frozen cauliflower florets
2 cups shredded Mexican cheese or Monterey Jack cheese
1 jar Siete Green Enchilada sauce
1 cup Joe’s yogurt
8 ounces cream cheese, softened
1/2 teaspoon minced garlic
3 cups shredded cooked chicken (or turkey)

1. Preheat oven to 350 degrees. Have a 9x13-inch baking dish ready.
2. In a medium bowl, combine 1 cup of the shredded cheese, the green encilada sauce, Joe’s yogurt, cream cheese, garlic, and the frozen cauliflower.
3. Add the shredded chicken and mix together.
4. Spoon the mixture into the baking dish and spread evenly.
5. Sprinkle the remaining shredded cheese over the top.
6. Bake for 35 minutes, or until heated through and the topping starts to brown.
