Kimchi Jeon: Perfect Korean Keto Breakfast

We discovered this restaurant shortly before moving from Kyiv. It was located at an odd entrance to a building with a Samsung sign, overlooking a ravine and a heating pipeline. A Korean cuisine restaurant. If you’ve been to any Asian fast-food place, not a stylized expensive restaurant, you can imagine this place. Plastic, faux leather, wooden panels, eye-poking decor. The restaurant also had karaoke combined with a mini-golf course covered with artificial grass. Moreover, you could wear a traditional Korean dress and take photos in it (see stories). But most importantly, they served authentic Korean food—spicy, flavorful, fatty.

The cooks, who were also the waitresses—Korean grandmothers, didn’t speak a word of any language except Korean. Yet, it was clear that it was important for them that the restaurant’s guests ate well and left not just full, but rolling out, belching contentedly.

In short, it was the best restaurant in the world.

There we tried kimchi-jeon—Korean pancakes. Originally, they are not necessarily made with eggs but with flour and starch. Optionally, you can add canned tuna, sliced squid, hot pepper, or sauce.

• 3 eggs
• 0.5 tsp salt
• 1 tsp baking powder
• 2 tbsp almond flour
• 1 green onion (feathered)
• 1 clove of garlic
• 300g kimchi (without sugar and flour)
• 50g clarified butter or animal fat (for frying)

I don’t know if this place still exists or if the Korean grandmothers are still in Kyiv. In October 2022, the building where this restaurant was located was hit by a missile strike.
