This recipe is packed with fresh seafood, vibrant vegetables, and Mediterranean flavors, making it a perfect low-carb meal for any time of the day. Ingredients:

200g shrimp, peeled and deveined
200g calamari rings
1 small zucchini, sliced
1 bell pepper, sliced
1 cup cherry tomatoes, halved
1/2 red onion, sliced
2 tbsp olive oil
1 tbsp lemon juice
2 cloves garlic, minced
1 tsp dried oregano
Salt and pepper to taste
Fresh parsley for garnish
Instructions:

Heat 1 tbsp of olive oil in a large skillet over medium heat.
Add the garlic and cook until fragrant, about 1 minute.
Add the shrimp and calamari rings, cooking until the seafood is just opaque, about 3-4 minutes. Remove from the skillet and set aside.
In the same skillet, add the remaining olive oil, zucchini, bell pepper, red onion, and cherry tomatoes. Sauté for about 5-7 minutes until the vegetables are tender.
Return the seafood to the skillet, and add lemon juice, dried oregano, salt, and pepper. Stir to combine and heat through.
Garnish with fresh parsley and serve immediately.
