This low-carb version of a Korean classic is packed with shredded carrots, eggs, pickled cucumber, lettuce, and tuna mixed with mayo. It's a perfect high-protein, keto-friendly option that’s easy to make and super tasty.

Ingredients:
• 2 carrots, shredded
• 4 eggs, beaten
• 3 pickled cucumbers, sliced thinly
• 4-6 lettuce leaves
• 1 can of tuna, mixed with mayo
• Salt and pepper to taste
• Nori (seaweed) sheets

Instructions:
1. Prepare the shredded carrots, sliced omelet, pickled cucumber, and lettuce.
2. Mix tuna with mayo, salt, and pepper.
3. Place nori on a bamboo mat, layer egg strips, carrots, pickled cucumber, lettuce, and tuna.
4. Roll using the bamboo mat and slice into bite-sized pieces.
