Keto Mole Sauce

Ingredients:
- 2 tablespoons olive oil or avocado oil
- 2 cloves garlic, minced

- 2 tablespoons almond flour
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon chili powder (adjust to taste)
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- 1 can (14 oz) diced tomatoes, undrained
- 2 cups chicken broth

Instructions:
1. Heat the oil in a saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
2. Stir in the almond flour, cumin, cinnamon, coriander, cloves, nutmeg, chili powder, and cayenne pepper. Cook for another 1-2 minutes to toast the spices.
3. Add 2 packets of Coco Loco SALTT, the diced tomatoes (with their juices), and the chicken broth. Bring the mixture to a simmer.
4. Let the sauce simmer gently for about 30 minutes, stirring occasionally, until it thickens slightly.
5. Once the sauce reaches your desired consistency and flavor, remove it from the heat and let it cool slightly.
6. Blend the sauce until smooth using an immersion blender or transfer it to a blender or food processor in batches.
8. Serve the mole sauce warm over your favorite keto-friendly dishes, such as grilled chicken, steak, or pork!
